Preheat your slow cooker or crock pot. Mix rub ingredients with olive oil in a small bowl. Massage carnitas rub mixture all over flank steak. Line your crock pot with olive oil as well. Place your flank steak in the crock pot. Add onion, whole red orange, limes, honey, Chile habanero pepper and bay leaf. Cook for 6 hours on low heat.
Mix all tortilla ingredients with a whipping wand. Add shortening to flour mixture. Mix with your hands. Add the hot water to the mixture (It should be tolerably hot not boiling hot). Mix with your hands again and knead the flour well. It should be wet a tacky yet form a dough. Knead for as long as you need to until the dough is perfect for you (approximately 12-15 minutes).
Break apart your dough and make dough balls resembling a golf balls. Take each dough one by one and dip it into a bowl with 1 cup of shortening.
After, cover the entire dough ball with flour.
( 1 cup of all purpose flour is plenty).
Pre heat a cast iron pan to medium low. Sprinkle a little flour to a cutting board and roll your dough out. Since we covered it with shortening and flour it should help make the dough very easy to work with. Take your time and roll it out slowly until it is nice and round. The key is to roll it a little larger than you want because when it fry's on the cast iron pan it will shrink a little bit.
Place the flour on the non-stick cast iron pan and let it "fry" with out oil for 2- 3 minutes and then flip it over to it's opposite side. (I use my hands but you can use a pancake spatula if needed).
Repeat the tortilla preparation process for the remaining golf sized dough balls and place tortillas in a linen towel to cool before serving.
Now feel free to add some fresh cilantro, lettuce and any other topping in your taco. The Yummy carnitas will have a lot of flavor so you won't need too many other toppings. ENJOY!
