Ceviche, Ceviche, Ceviche! Yes, Please! This 4th of July weekend, We adopted this traditional Peruvian appetizer with a spicy kick, and it was AMAZING! I marinated seasoned poached shrimp in an elaborate citrus shrimp stock. Then mixed in fresh onions, tomatoes, cilantro, corn, and avocados; and paired it with a lightly salted fried plantain.

Shrimp: For the best results in this recipe, use 16-20 count shrimp. Pre-cooking/Poaching, the shrimp, is great if you are pressed for time.

Onion: Red Onions provide a kick for this recipe and shouldn’t be omitted unless you absolutely hate onions.

Roma Tomatoes: The tomatoes marinate the citrusy flavors. I cut out the membrane of the tomatoes to keep the essence of the dish in tack, so it is not too soupy.

Cucumber: This ingredient adds to the texture of the recipe and it so yummy!

Avocados: Add this essential ingredient to the mixture last because as we all know avocadoes have to be attached to their seed or they brown very easily.

Ceviche Stock: The secret ingredient is the the stock is the cajun seasoning. You wouldn’t think this seasoning pairs well in a Peruvian dish but it absolutely does! Cajun seasonings are comprised of salt, organic paprika, garlic, onion, red and green bell peppers, and celery powder. When you lightly blend the ingredients in, make sure that you don’t blend too much because you want to be able to strain the essence of the stock. I also use the mortar to pull out those flavors before I put it in the blender as well.

Try variations of this Spicy Shrimp Ceviche Recipe by using any fresh fish like mahi mahi, grouper or sea bass. Since these are a flakier fish than the shrimp mussel fibers you can marinate and cure them in the ceviche stock for several hours and they will be more true to the essence of the ceviche dish.

    in a medium saucepan bring 2 quarts of water, olive oil, and salt to a boil. Add shrimp and cook for 3 minutes. After, rinse with ice-cold water to cease the cooking process. and set aside.

    Place the garlic cloves, cajun seasoning,  ginger, celery stalks, sprigs of cilantro, poached shrimp, vegetable stock, Chili Habanero Pepper, Serrano pepper, lime juice, red onions, and clamato juice in a blender and pulse for 30 seconds.

    Place poached shrimp in a bowl with ceviche marinade and place two bay leaves on top. Allow shrimp and stock to marinate for 30 minutes.

    Dice the onion, cucumber, tomatoes, and cilantro and place in refrigerator to retain freshness. Remove the corn from the cob and place it in the refrigerator as well.

    Peel, slice, and fry the plantain. Set it aside to cool. Lightly season with salt to taste.

    After 30 minutes has lapsed. Add diced onions, cucumbers, tomatoes, cilantro, and corn. Dice your avocados and add them to the mixture. Mix softly. Plate the appetizer in a margarita glass and garnish with the fried plantain. Enjoy!
